OK, I admit it. I don’t always eat a very healthy lunch, if I eat lunch at all. If I am cooking for a client, I just cook my way right through the day never stopping to take time to eat something myself until dinnertime. If I am working from home and there are no leftovers in the fridge, I may not stop to eat until I realize at 3:30 that my stomach is making some pretty crazy sounds. Then I will just grab at whatever is around. So when I put this salad together for lunch today in under 10 minutes, I was just so thrilled. Healthy. Yummy. Fast. My kind of lunch!
I asked my wonderful online friends last week what was the hardest thing about preparing Thanksgiving dinner. The issue most struggle with? Getting all the food to the table hot and at the same time. A few weeks ago I had the pleasure to meet with Carla from 7th Heaven Farm in Tabernacle, NJ to observe how she raises pastured animals in an environment that allows them to graze freely and exhibit their natural behaviors. She graciously provided me with some meat from her farm to test out on my family. The boneless pork chops looked wonderful and I just couldn’t wait to make them.
Hi. My name is Fran and I am an information addict. Some people have chocolate. Some people have shoes. Others have cigarettes. I have the internet.
The internet is a lot like potato chips. I can’t go out to the web and just stop at one blog post or one website. I visit my friend the internet with the best intentions. This week it was to figure out what healthy power snack I could make for my bicycle obsessed husband (yup, his vice is road biking) and the other members of his bicycle club for the upcoming City to Shore ride to benefit the Multiple Sclerosis Society.
Hours later I had Peanut Butter Power Bites.
Summer is here! It’s time to slow things down and enjoy time with family. Who wants to stress out about dinner? Summer meals should be easy, healthy and ideally made outside. Here are a few ideas for getting dinner on the table without breaking a sweat.
